Machboos is the Official National Dish of Qatar. “Machboos ala Dajaj”, Actually means spiced chicken and rice. The dish is very affordable all over the Middle East. It’s a rice-based dish with marinated pieces of lamb, chicken, or even seafood or vegetables. It may also have rose water or lemon juice sprinkled before serving to add extra flavor.
It is similar to biryani from but 2 key ingredients make Machboos very unique. The first is loomi. These are limes that have been boiled and sun-dried. This adds exquisitely tangy and smoky flavors, which permeate every grain of rice and blend beautifully with the chicken. The second is Baharat. This is a pungent spice made from roasting black pepper, paprika, nutmeg, cloves, and cinnamon, amongst others.
Machboos depth of flavor comes from a combination of aromatic spices that produce a smoky taste. Served with a variety of meats, the dish is a favorite across the Arabian Sea. The National Dish of Qatar served with different sizes and sauces to provide different tastes after easting repeated times.

- 1 chicken
- 2 cups of Basmati rice
- Half a cup of white onion, cubed
- Half a cup of tomatoes, roughly chopped
- A quarter of a cup of chopped parsley
- 1 tablespoon of grated garlic
- 1 tablespoon of grated ginger
- 2 green hot peppers
- 4 tablespoons of Qatari bazaar (spice mix)
- 1/4 cup of vegetable oil
